Dark Chocolate Pudding

If you want to make a sugar-free, fat-free, dairy-free dark chocolate pudding, I’ve got the solution!

Process in a blender:

  • 3 cups any non-dairy milk

  • 4T dark cocoa powder

  • 3T corn starch

  • 1t vanilla

  • 10 prunes or dates (pitted)

  • 1-2T honey (optional)

After everything is thoroughly mixed together, transfer ingredients to a saucepan.

Cook on medium-high heat, stirring constantly.

When pudding comes to a full boil, continue to cook and stir for one minute. (Optional: for additional flavor, stir in 2T butter after you turn off the heat, if desired)

Pour into 5-6 small glass containers. (Thrift stores have a lot of them!)

After they cool, refrigerate.

PS: for a special treat, spread this pudding on rolls made from Einkorn flour. It’s similar to a chocolate cream-filled donut!
